To stand up against the robust flavors of this buffet, a salad needs to have strength and character to rival Mythic Grecian Heroes. To this end we begin by picking the best peppery red mustard leaves, mixing them with the tender, zesty Arugula and drizzling this perky mix with the fi nest aged balsamic vinaigrette.

Next we lay Grilled Oyster Mushrooms amongst the greens, and finally we garnish with crunchy, spiced walnuts and fried medallions of local goats' cheese.

Balsamic Vinaigrette

  • 1/2 Cup Balsamic Vinegar
  • 1 1/4 Cups Olive Oil
  • 1/2 Teaspoon Chopped Fresh Parsley
  • 1/2 Teaspoon Chopped Fresh Basil
  • 1/2 Teaspoon Chopped Fresh Cilantro
  • 1/2 Teaspoon Chopped Chives
  • pinch Teaspoon Dried Oregano
  • pinch Teaspoon Dried Tarragon

Put all the ingredients in an empty wine bottle, cork and shake

vigorously before using.
