Mahogany Duck with Mahogany Onions and Fresh Cilantro
Ingredients
MAHOGANY MARINADE
Blend all ingredients:
- 1/2 Cup Garlic
- 3/4 Cups Chopped Lemon Grass
- 3 Tablespoons Chopped Ginger
- 1/4 Cup Red Headed Hot Sauce1 Bunch Chopped Scallions
- 1/2 Cup Soy Sauce
- 1 Cup Hoi Sin Sauce
- 1 Cups Brown Sugar
- 1 Cups Coconut Milk
- 3 Tablespoons Fish Sauce (Nam Pla. sort of an anchovy juice)1 Cup Sesame Oil
Methods/steps
For this dish, use the Duck Breasts left after you make the Duck Confit recipe coming up. Cut them into nickel-sized pieces and thread onto a skewer. Blend the marinade ingredients in a food processor and marinate the duck skewers for at least 12 hours before grilling. Slice a little red onion and toss with a little marinade for a sauce and sprinkle fresh cilantro.
