"Basmati" is an ancient variety of rice from the southern flank of the Himalayan Mountain range.

 In Hindi the name means "Queen of Fragrance". It's also available at your local A&P. Always soak Basmati rice for a couple of hours before cooking... I was once shown a method where it was actually cooked twice... once to remove starch and than again to cook the rice through. It's really starchy and you can do without all that glue. Before going to those extremes try this method out...

Assemble an array of your favorite root vegetables. Among my favorites are Carrots, Parsnips, Yams and Sunchokes, but I also will often include Turnips, Salsify, Burdock, Beets or... well... you get the idea.
