There are many versions of mustard BBQ sauces popping up all  over the south, but most consider the Charleston area to be the birthplace of this tangy condiment. I have tried various versions myself and fi nd this recipe to be tasty and perfect for pork, beef or fish. Best of all it is so simple a child can do it.
Fresh horseradish is one of those things that simply has no substitute.  Sure, you can use the stuff you buy in a jar on the grocery store shelf, but unless you go through the sweet agony of grating your own horseradish root you're really missing out.
