With access to a good smoker, cooking a whole hog is a simple matter. The key is to generate lots of good hickory smoke without raising the temperature above 300 degrees. A fully-grown Russian wild boar will dress out at between 30-40 pounds of lean, flavorful pig ... enough for 25-30 people.
There is a special feeling associated with a good fish fry... When a southerner of a certain age thinks of fried fish, he or she hears echoes of teenage road trips and shag music, warm salty nights and bonfires on the beach. It's all still down there if you look for it, but why bother when you can go any time you want just by frying up some fish, opening a beer and dropping an old record in the stereo.
